SOAP is specially formatted XML used by most/many web services and in today's WCF services which lays out the structure of their methods and the parameters/data contracts the accept and send back.  It makes it much easier create clients from its schema.  The proxy classes created by Visual Studio resulted from Visual Studio reading the SOAP XML Schema of the web service.  Visual Studio essentially wrote a bunch of code for you that matches up with the web service so you didn't have to.
