How can I convert this to an single number in Excel?

15:30 - 16:30 convert to 1

Hello Dan,
Assuming it is a string and the times are always hh:mm format in cell A1 then the following will do what you want.

=(TIMEVALUE(RIGHT(A1,5))-TIMEVALUE(LEFT(A1,5)))*24
